These are great, melt-in-your-mouth cookies. They are a wonderful treat to give out to friends at Christmas time, and serve at your family gathering. Put them up in festive tins or other holiday packaging that you can find at most stores. You might also use the small pre-printed holiday bags tied with ribbon and bows. But be prepared to make them again the following holiday...as I found out -- after the first holiday I served these, I did not take the time to make them the following year. Big mistake ... everyone asked for them specifically, leaving me just a little bit embarrassed that I did not have them.
So, on Christmas Day -- make these a tradition!
GABRIELLE'S SCOTCH SHORTBREAD COOKIES
3 STICKS (1-1/2 CUPS) SALTED BUTTER, SOFTENED
1/2 CUP GRANULATED SUGAR
4 CUPS UNSIFTED ALL-PURPOSE FLOUR
1 TSP. GROUND CARDAMOM
1 TSP. GROUND NUTMEG
1-1/2 CUPS POWDERED SUGAR
COMBINE ALL INGREDIENTS EXCEPT POWDERED SUGAR IN A BOWL AND MIX WITH YOUR HANDS UNTIL A BALL OF DOUGH IS FORMED. ON A LIGHTLY FLOURED SURFACE, ROLL OUT THE DOUGH TO 1/2 INCH THICKNESS. CUT COOKIES INTO 1-1/2 INCH SQUARES. PUT ON UNGREASED COOKIE SHEETS. BAKE AT 350 DEGREES FOR 10 TO 12 MINUTES. COOKIES WILL BE FIRM TO THE TOUCH, BUT PALE. WHEN FULLY COOLED, DUST TOPS HEAVILY WITH POWDERED SUGAR, OR, IF YOU DESIRE, YOU MAY ALSO ROLL THE COOKIES IN THE SUGAR, AND GENTLY SHAKE OFF THE EXCESS. STORE IN AIRTIGHT CONTAINER. MAKES ABOUT 5 DOZEN COOKIES.
1 lb.ground turkey (or ground beef)
15 oz. can stewed tomatoes
15 oz. can chili beans
15 oz. can tomato sauce
1 small can kidney beans - optional
Brown meat, drain grease. Add garlic, onion and chili powder to taste. Add water from tomatoes. Chop stewed tomatoes into chunky pieces and drop them into the pot. Add the tomato sauce and the chili beans at the same time. Simmer 45 minutes, check and adjust the seasoning, then cook 15 minutes more. Serve with grated cheese.
P.S. If you want to live dangerously and the children aren't around, here's a nice recipe for Karoke Coffee you can serve with dinner, after dinner or even without dinner.....
1 oz brandy
1 oz. kaluha
1 oz. creme de cocoa
1 large dollop whipping creme
Add the first three ingredients to a TALL mug of hot coffee. Stir ingredients, then add a large dollop of whipping creme on top and serve.
If you would like to serve a smaller version of this to your guests, serve it in a regular-size coffee mug and reduce the amount of each shot of liquor to 1/2 ounce instead of 1 ounce. This is a tasty, pleasant drink, but on the strong side. Enjoy!
